A moist and delicious Blueberry Banana Bread. So easy to make. Gluten free, grain free, refined sugar free, and paleo.

Yes, I’m back with yet another blueberry recipe. I can’t help myself. I simply adore blueberry season. Plus, you can never have enough banana bread, IMHO.

If you’re looking for a super simple (one bowl!!) summer recipe, this could be it. A moist and tender quick bread loaded with ripe bananas and juicy blueberries.

What’s in Blueberry Banana Bread?

Just a few basic ingredients. Things you may already have in the kitchen.

  • ripe bananas
  • eggs
  • butter, ghee, or coconut oil
  • maple syrup
  • vanilla extract
  • almond flour
  • tapioca flour
  • baking soda
  • salt
  • fresh blueberries

I’ve always been a big fan of super simple recipes. But now more than ever, I just want to make yummy food without a big fuss.

If you follow me on INSTAGRAM, you may already know that our family is leaving Northern California and moving to the other side of the country. Needless to say, life is full and we are deep in relocation planning, selling/buying houses, packing, and saying good bye to our sweet community. Having my go-to recipes to lean into during this time has been a life-saver.

This juicy little loaf somehow brings a bit of joy into our house as we pack up in preparation for our next adventure. The smell. The fluffy tender texture. The sweet marriage of bananas and blueberries.

It’s the little things.

BAKING TIPS

❤️ Very ripe bananas give the BEST flavor. Brown spots = sweet bread.

❤️ Fresh blueberries work best. If using frozen berries, do not defrost beforehand. You may need to add a few extra tablespoons of flour to absorb some of the moisture.

❤️ Do not over-mix. Quick breads should be mixed just until ingredients are combined. Otherwise, your bread may sink in the middle or not cook properly.

❤️ Cover your banana bread with aluminum foil 35 minutes into baking. Almond flour will get very dark very quickly.

❤️ Let the loaf cool almost completely before slicing for BEST texture. Trust me on this one.

Description

A moist and delicious Blueberry Banana Bread. So easy to make. Gluten free, grain free, refined sugar free, and paleo.


Ingredients

Scale
  • 2 very ripe bananas
  • 2 eggs
  • 1/4 cup butter, ghee, or coconut oil – melted
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 2 cups almond flour (I use THIS blanched brand)
  • 1/2 cup tapioca flour (like this)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup fresh blueberries, divided

Instructions

  1. Preheat oven to 350’F.  Line loaf pan with parchment paper or liberally grease.  Set aside. 
  2. In a large bowl, mash bananas with a fork.  Whisk in eggs, melted fat, maple syrup, and vanilla extract until well incorporated. Stir in almond flour, tapioca, baking soda, and salt until just combined.  Do not over-mix. Fold in 3/4 of the blueberries. 
  3. Pour batter into prepared loaf pan, sprinkle remaining 1/4 of blueberries on top, and bake for 35 minutes.  Remove from oven and cover with aluminum foil and bake another 15-25 minutes , until toothpick in center comes out in the center. (Almond flour will get overly brown if you don’t cover during last part of baking.)
  4. Remove from oven and cool for 5 minutes.  Then remove from loaf pan and cool on cooling rack before slicing. Enjoy!

    This is our favorite new bread! My girls (8 and 12) love a slice for breakfast and it’s the best way to use up old bananas and frozen blueberries. Thanks for all your recipes, we cook them often and they always become fantastic family favorites.

🫶 things i’ve noticed:

➡️ i’m rarely hungry between meals (i used to ALWAYS be hungry)
➡️ i have more energy and don’t hit a slump at 3pm 
➡️ i seem to be building muscle more easily with strength training 
➡️ my blood sugar levels fluctuate less (less low blood sugars after 3 hours of no eating)
GRAIN FREE GINGER COOKIES 🎄 i’ve always love GRAIN FREE GINGER COOKIES 
🎄 i’ve always loved ginger cookies but these are hands down THE BEST ones i have ever eaten • chewy, spicy goodness just begging to be devoured • this recipe is from the early days of the blog and continues to be a holiday favorite 

🎄 it’s hard to believe they are grain, eggs, dairy, and nut free 

🎄 the base is made from sunflower seeds • sweetened with REAL maple syrup and a titch of molasses, so no sugar crashes after eating these •  the best part is the fresh ginger • i’m in love ❤️
