Love chia pudding? Then you are going to really love these chia pudding popsicles.
It’s summertime, which means it’s popsicle season at our house. All the kids know that at any given time, there will be multiple kinds of popsicles happening in our freezer. Popsicles are my favorite summertime treat because the kids can enjoy a deliciously sweet treat without even realizing that I’m serving them healthy food.
Over the years, I have collected several different popsicle molds. We have little ones and big ones. We have ones shaped like stars. We have molds shaped like fancy little jewel rings. We even have long and skinny ones. You can’t have enough fun popsicle molds. I have these stainless steel molds on my wish list to get next.
A few weeks back, I shared my favorite way to eat chia pudding. My chia pudding breakfast bowl is super popular around here during the hot summer months when we are a bit lazy and don’t cook as much. Today I am going to share another fun way to eat chia pudding: freeze it into a popsicle. What you get is a creamy, delicious cold treat loaded with healthy fruit and superfood chia seeds. The chia seeds give the popsicles a fun texture.
The recipe is simple. Milk, sweetener, and chia seeds to make a pudding. Let it sit for at least 2 hours. Then take your favorite summertime fruits and layer them with the chia pudding in your popsicle molds. Freeze and enjoy. You will have some very happy kiddos if you do this.
You can use whatever milk that you like. I use full fat coconut milk because it is extra creamy. You can use whatever fruit makes you happy. Our family favs are blueberries, raspberries, strawberries, cherries, and mangoes. Little One always picks the mango one.

- Yield: 5 large popsicles 1x
Ingredients
Instructions
- Combine milk and sweetener until creamy smooth. Whisk in chia seeds. Cover and allow to sit in fridge until chia seeds expand – at least 2 hours.
- Remove from fridge and spoon in a bit of chia pudding (about a tablespoon) into 5 large popsicle molds. Then layer in a bit of your favorite fruit. Top with more chia pudding and then more fruit. Continue layering until mold is full. Give molds a little tap tap to get the chia pudding to fill in all of the spaces around the fruit.
- Freeze until frozen. Enjoy!
Notes
– These popsicles are mildly sweetened. For a totally unsweetened treat, simply leave out sweetener. And if sweet is your thing, feel free to adjust the chia pudding for sweetness once the chia seeds have expanded by adding more sweetener.
-For best flavor, use the freshest, sweetest, most ripe fruit you can find.
