We can all use more vegetables in our diet, amiright?

Raise your hand if you feel like you get enough vegetables every day?  Yeah, I’m lacking in that department some days too.  Many people ask me what they should give up or avoid when they are first getting started with healthy living, and my answer is always the same.  Rather than focusing on what I can’t eat, I try to focus more on eating good quality real foods – meaning lots of healthy fats, good quality proteins, and vegetables, vegetables, and more vegetables.

When you fill your plate with all of this “whole food” goodness, it leaves less room to make poor choices in what you eat.  Your body will naturally crave less sugar, and you will naturally have more energy and feel better in your body.  This leads to making more good choices that affect not only what you eat, but how you feel and how you think as well.  It really is a win win situation.

Alright, let’s get right down to this beautiful smoothie that I’m sharing with you today.  Here’s the deal:

….hidden veggies.  I love sneaking in as many veggies as I can during the day.

….beets are amazing. They are high in immune-boosting vitamin C,  fiber, B vitamins, iron, manganese, copper, magnesium, and potassium. They are known to lower blood pressure, reduce inflammation, boost stamina, support detoxification, and to ward off cancer.

….blueberries are amazing. They are high in antioxidants that not only prevent cell damage, but also protect against many chronic diseases, including cancer, heart disease and diabetes. They also help fight inflammation and are super good for your brain. Blueberries are high in fiber and can help keep your bowels regular and support healthy digestion.

….you can add any milk that you like.  I usually use full fat canned or homemade coconut milk, homemade pumpkin milk, or my super-charged green milk.

….I prefer my beets cooked when I use them in smoothies, but you can totally use fresh beets.  I recommend grating them first if you use them raw to get a smoother consistency, especially if you don’t have a high-speed blender.

…..my recipe is basic.  Feel free to add in whatever extras you like.  Some of my typical favs to add a bit of protein are 1 tablespoon of hemp seeds, 1 tablespoon of collagen peptides, and a small knob of fresh ginger. You can also use coconut water instead of milk and add a bit of orange.

I’ve been a beet lover most of my life.  I love them roasted.  I love them shredded raw on my salad.  And I love them in my smoothies. I know this is not the case for everyone. But even if you’re not totally sold on eating beets, I highly recommend that you give this smoothie a try. I think you are going to LOVE the combo of blueberries and beets. It’s sweet summer berries meets sweet earthy veggie.  Loaded with all the good things.  Healthy AND delicious. Oh, and kid-approved.

Ingredients

Scale
  • 3/4 cup frozen blueberries
  • 1/2 cup chopped or grated beets  (** see note)
  • 1/2 banana   (** see note)
  • 1 cup milk of any kind (I used THIS)

TOPPINGS

  • more blueberries
  • yogurt (plain regular or dairy free)

Instructions

  1. Combine all ingredients (except toppings) in a blender.  Blend until creamy smooth. Add more liquid if necessary.
  2. Top with whatever makes you happy. Enjoy!

Notes

  • I prefer cooked beets for this recipe.  I wash and trim off tops and then roast them at 400′ F in my Dutch oven until soft. You can also use raw beets for this recipe.  I recommend grating them first, especially if you do not have a high speed blender.
  • The banana is added to add a bit more sweetness to this recipe.  When making this smoothie for myself, I usually just leave it out.  I like to add it a handful of cooked frozen cauliflower instead.  You can read more about how I use cooked frozen veggies in my smoothies HERE.

    Delicious. I received a smoothie machine for Christmas and needed a recipe to try it. I love beet smoothies and this one came put great. I dont like milk of any kind so i used honey vanilla yogurt and a splash of apple juice. Came out great, just the right amount of sweetness to beet flavor.

      I do not.I get fresh beets in my weekly vegetable box. But you can use whatever beets you have.

    Can we use beet root power with this receipe, how much to substitute 1 m beet? Also I have been using Power beet, by nu therapy for the taste, is it just as beneficial as beet root power. Thanks Susan

🫶 i never tell clients how or what they should 🫶 i never tell clients how or what they should eat • i share things that i see make a difference (with myself AND the clients i work with) • the biggest shift i’ve made in the past year is upping my protein intake • i aim for around 1 gram of protein per pound of body weight per day • even with all the protein, I keep my meals very plant forward 🥦🥕🥒🥑

🫶 things i’ve noticed:

➡️ i’m rarely hungry between meals (i used to ALWAYS be hungry)
➡️ i have more energy and don’t hit a slump at 3pm 
➡️ i seem to be building muscle more easily with strength training 
➡️ my blood sugar levels fluctuate less (less low blood sugars after 3 hours of no eating)
GRAIN FREE GINGER COOKIES 🎄 i’ve always love GRAIN FREE GINGER COOKIES 
🎄 i’ve always loved ginger cookies but these are hands down THE BEST ones i have ever eaten • chewy, spicy goodness just begging to be devoured • this recipe is from the early days of the blog and continues to be a holiday favorite 

🎄 it’s hard to believe they are grain, eggs, dairy, and nut free 

🎄 the base is made from sunflower seeds • sweetened with REAL maple syrup and a titch of molasses, so no sugar crashes after eating these •  the best part is the fresh ginger • i’m in love ❤️
